A South Carolinian Fourth of July

Independence Day has always been one of my favorite holidays; not only because I’m a history buff, but also because I love the food. Turkey and ham are all well and fine, but a fresh burger off the grill sometimes beats them all. I also love the fireworks, but living in New York led to some disappointing Fourth of July’s, due to the illegality of fireworks. It wasn’t always like that though. Growing up on Long Island in the 80s, fireworks were legal. Back then we would have huge block parties, where both ends of the block would be blocked off by the town so that we could have free reign of the streets without worrying about cars driving by. Whether it was at my grandparents or my cousins house, there was plenty of food, fireworks, family, friends, and fun! But then the fireworks eventually became illegal, and we moved away from family to Middletown. The only way to see fireworks there was to go to one of the town-run fireworks shows which always sucked, especially since the place was always jam packed. But I digress.

This year we spent the Fourth of July right here in Myrtle Beach, and it was one of the best ever. If there’s one thing the South does right, it’s celebrating Independence Day (though I’m sure some people down here would prefer to celebrate a Confederate Independence Day.) Fireworks are extremely legal down here, and not only that but you can buy them ANYWHERE. Don’t have time to head down to the local fireworks store? Last Bite of NY BBQ at Dinosaur BBQ

When people think of New York food, they think of things like pizza and hot dogs. Point is, I doubt any really associates the Empire State with BBQ. That doesn’t stop a few restaurants that want to try their hand at it, and one of the best NY BBQ I have ever had came from Dinosaur BBQ. Shell came home from work tonight bearing the gift of Dinosaur, and I couldn’t wait to sink my teeth in.

I went for one of their great combination platters, after my sister highly recommend I try their sausage. So my dinner consisted of:

  • Four Pork Ribs
  • One Sausage Link
  • Macaroni & Cheese
  • BBQ Fried Rice
  • Corn Bread

The Best Damn Tuna Fish Sandwich EVER!

Once or twice a week, I will head to the kitchen around lunch time with a craving for a tuna fish sandwich. I’m very picky with tuna, and I will never order it from a deli or other sandwich shop (and I NEVER ate the tuna fish in school because the cafeteria tuna looked like a pile of ash!) If I happen to be at my parents house, I have no problem eating it when my dad makes it. However, it’s just not the same as my home-made tuna, because I do things to it that my dad would never think of eating. So today I’m going to share with you what I put in my tuna. It’s not a full-blown recipe because I do everything by sight and don’t measure the ingredients out, so feel free to do it to your personal taste. I use:

  • One can tuna
  • Light mayonnaise
  • Honey mustard
  • Lemon juice
  • Lime juice
  • Kosher salt (it is essential to use kosher…using regular table salt doesn’t do the sandwich justice)
  • Ground black pepper (I crush the peppercorns in a grinder, not regular “table pepper”)
  • Two slices Arnold’s Bakery Light Bread (its a much smaller piece of bread which cuts down on bready carbs)
  • 1 Slice of cheddar cheese

Cooking/Food Category Now Food & Drink

Since this site first started up, I had a blog category titled “cooking/food”, which is where I lumped my adventures in the kitchen along with restaurants we ate at and different things we drank. Today as I was writing up my previous blog on my brother-in-law’s F.N.Beer, I realized that I didn’t like lumping beer and wine talk into a category called “cooking/food.” So I went ahead and changed it, and it will now be called the more stylish “Food & Drink.” This category fits about everything to do with consuming anything, so it works for me.

Dinosaur BBQ Topples Brooks

Ever since spending two years at SUNY Oneonta, I have sworn by Brooks BBQ. It was a decent BBQ with a ridiculously sweet sauce, and I loved it. However, this has proven to be a temporary fling, as a new BBQ love has entered my life…Dinosaur BBQ. They opened a restaurant in Troy about a month or two ago, and Shell and I met for lunch there to give it a whirl. I can honestly say that my heart has been stolen by this saucy seductress that is Dinosaur BBQ.

Since it was lunch, I didn’t go all-out and snag the ribs, which I would have loved to do. Instead, I settled for the BBS sandwich, which is brisket, bacon, and swiss heaped onto a nice sandwich roll. Shell went for the pulled pork sandwich…Memphis style, which meant it was topped with coleslaw. Both sandwiches were ridiculously tasty. The sauce for Dinosaur is far superior to Brooks in terms of taste. While Brooks is overly sweet, Dinosaur has a slight spicy tang to it, which makes for a much more sophisticated BBQ sauce. Getting Cheap Eats Where You Live

Shell and I love to go out to eat at awesome restaurants. One of the greatest things about our current location is that there are literally tons of tastetacular privately owned restaurants (ie- not chain restaurants) for us to try, and if we needed to, we could go to a different one each time and never go to the same place twice. However, we have been going out less and less due since it is a pricey pastime, and it is far cheaper to stay in and cook.

That is until one day I happened to hear about a website called Seize the Deal. Basically you sign up, and you will receive daily e-mails informing you what the deal of the day is. It’s usually to a restaurant, but occasionally it’s something else like a golf course or other amusement location. The deal is usually a 50% discount on a gift card, so you will spend $25 and get a $50 gift card out of it. The gift card is actually a coupon printed right off your computer, and you just hand it to the server when you sit down at your table. This helps us go out to different restaurants, especially ones we wouldn’t normally go to due to the price. A great example is 677 Prime, which is a crazy fancy steakhouse up here in Albany. We would never go there on our own, but with the gift card deal we received from them, it basically gives us a free entree, so now it’s more in our price range. Read More »

Wednesday Night=Fondue Night

While cleaning up Shell’s dad’s house a few weeks back (getting ready for the garage sale), we unearthed her mom’s fondue set. This thing looks like it’s from the 70s or something, but it works, so we didn’t complain. We got around to trying it out tonight.

We did a simple chocolate and added in some mint syrup, which we didn’t really taste. I guess we’ll add more next time! For dippers, we had strawberries, mini marshmallows, pretzels, and grapes. Yup…grapes! They were pretty dang tasty, believe it or not!

The pretzels proved to be either too big or too small to fit on the forks that came with the set, but I quickly realized that sandwiching the pretzel between two marshmallows did the trick just fine!

We definitely look forward to doing this again sometime. Anyone have any suggestions for other delicious delectables to dip into chocolate fondue?

We Italians Need a Holiday Too!!!

Sure, I like St. Patrick’s Day for the annual corned beef meal, but that’s about it. You won’t catch me wearing green, I won’t down a Guiness, and, long story short, I won’t go around pretending to be Irish, like so many people do. All too many people make believe that they are Irish for a day (and the weekend before, and the weekend after) during St. Patrick’s Day, and run around going bar-hopping and acting like fools. Now if you’re of Irish decent, I have no beef with ya…it’s your holiday and you do what you like. But there are more non-Irish people celebrating it here in the States than those who are Irish, and for that I say boo.

So on that note, I want to make my voice heard for all us Italians out there, that we want a holiday too. I mean, just picture how awesome a holiday would be if the Irish stuff was replaced by Italian stuff. For example, everyone would down awesome, delicious wine rather than beer. And let’s face it, wine is tastier than beer, goes better with a dinner, and gets you feeling good faster than a bottle of beer would. Secondly, the food. Screw the corned beef, cabbage, potato, and Irish soda bread. Sure, it’s a decent meal, but what about a GREAT meal?! Picture it: lasagna, baked ziti, meat pie, chicken cacciatore, veal piccata, sausage and peppers, pasta, meatballs, fresh warm Italian bread with some extra virgin olive oil, balsamic vinegar, and seasonings to dip it in…mmmm my mouth is watering just thinking about it!!! And what about dessert?! To be perfectly honest, I don’t even know what an Irish dessert is, but look at Italian desserts: cookies, cannoli, spumoni, tiramisu…simply fabulous!

So while I don’t mean to bash Irish cuisine and culture, I’m just saying that Italians need an ethnic holiday in the U.S. too. To be quite honest, both the food and drink are better, and I think people would have a great time getting drunk on wine and eating warm, hearty food. Easter is kind of a good example, so maybe that counts? Or maybe Columbus Day? Don’t start hating on me and telling me about all the bad things Columbus did…I’m a historian, so I know. However, it is an important holiday to Italian-Americans, and maybe more of us should start embracing it as such, rather than for the man himself.

Corned Beef and Cabbage (a la Crock Pot)

Happy St. Patrick’s Day everyone! Seeing how today is indeed St. Patty’s Day, I’m cooking up the traditional corned beef and cabbage dinner…in my crock pot! The crock pot is so easy to use and takes little time. Prep time is typically short, and once it’s in the crock pot, you pretty much just set it and forget it. Then when dinner time comes around and your stomach is grumbling, your meal is fully cooked, fresh, piping hot, and ready to be devoured. Enjoy!

Low-Fat Chocolate Chip Cookies

This recipe I pretty much came up with on my own. I went to Cara for some advice, but for the most part I took guessed on everything and went with the flow. These cookies are a little healthier since I only use one egg, replace 1/2 the usual butter with apple sauce, and use dark chocolate chips as opposed to milk chocolate. A bit of a note though: since I use apple sauce, the cookies will come out softer and won’t get crispy due to the added moisture. It kind of reminded me of a pancake. So if you want a crunchy cookie, this recipe is not for you. If you want a tasty snack that is a little healthier, than this one is for you.

Fettuccine Alfredo w/ Bacon

For dinner tonight Shell made a tasty fettuccine alfredo, using a light sauce from scratch. Also, she cooked up some applewood smoked bacon, and added that to the pasta. It proved to be quite the delicious meal, as the bacon tasted great with the pasta and sauce.

Chef Rob the Past Two Nights

I have been craving my chili all summer. However, I know better than that, because its kind of too hot during summer to eat chili. But I couldnt stand it anymore. So yesterday morning after Shell went to work, I headed off to Wal-Mart and picked up the ingredients I need to make chili. I then came home, popped everything into the crockpot, and let it do its thing.

As it was getting closer to Shell getting home, I realized we only had one piece of cornbread left! So in a desperate maneuver I ran to her recipe box, pulled out the one for cornbread, and proceeded to blindly attempt my first bread-baking ever. I can cook all kinds of stuff, but I never really tried baking, or making stuff with a batter. Needless to say, I was pretty nervous.

The chili and cornbread both came out excellent. My chili was as awesome as always…not too hot, but still a bit of a kick. The cornbread was awesome, and tasted just as if Shell made it. It was pretty tasty indeed.

The Gilded Otter Brewing Company

Shell and I met up with Steve and his friend in New Paltz last night, and had dinner at The Gilded Otter. I had originally heard of the place from a friend, and we were going to go with them, but when we got there the parking lot was 100% full, leaving us nowhere to park, so we didnt stay. We went to New Paltz last night since its kind of a half way point between Steve and me.

The Gilded Otter is a restaurant/brewing company. They produce several different beers at the place, and feature it with their food. Shell and I got there a little before Steve, so we went up to the bar and got our drink on a little early. I tried their Hefeweizen beer, which was pretty awesome, and had the faintest taste of banana. I had never heard of Hefeweizen until a few weeks ago, when it was in my Sam Adams summer collection of beers I bought. I liked Sams Hefeweizen also, but the Gilded Otter’s simply blew it away. Shell partook in her drink of choice; hard cider. The Gilded Otter does not make their own hard cider, but they bring it in from Warwick, which is also a local producer.

Eventually Steve and his friend got there, and we sat down at a table. Steve and I ended up ordering a sampling of their beer. I forgot what the exact name was, but it consisted of eight small glasses of each of their draft beers, along with a card so you knew what you were drinking. They were all pretty good, and after sampling them all, I still thought their Hefeweizen was the best.

So now onto the food. The menu at The Gilded Otter is extensive, and has some classics (wings, mozz sticks, calamari, etc.) as well as some upper-scale foods you wouldnt normally find at a bar/pub (smoked trout mousse, stuffed grape leaves, and mussels.) We stuck to the classics for appetizers and ordered chicken wings. There was mild, hot, and BBQ, and we went with hot. It was a very good hot wing sauce, and had some nice heat to it. For dinner I ordered braised short ribs, which was awesome. The side it came with was horseradish mashed potatoes, gravy, and squash. I wasnt a big fan of the potatoes (since Im not a fan of horseradish), but with the gravy and squash mixed with it, I enjoyed it. Steve got an order of jambalaya, and he was pleased with the heat and spice with it. Steve’s friend and Shell both had a bowl of spinach fettuchini and a bolognese sauce, which was also excellent. We also ended up ordering dessert. Shell and I split a slice triple chocolate cheesecake and Steve had a chocolate peanutbutter pie.

The Gilded Otter is freakin awesome! The beer is great, the food is delicious, the service was fast and pleasant (Steve had fun pestering the waitress as usual), and the overall atmosphere was pretty cool. I would totally go back, and I recommend anyone who is close by to go check it out. Heck, its worth the 1 hour 15 minute car ride for me!

Not Quite Like Mom’s Home Cooking

When I saw my parents last weekend, I asked my Mom for my favorite recipe of hers: her chicken cacciatore. The way she makes it is amazing…it is so tender, so delicious. The meat pulls right from the bone, and is so moist. However, its a meal that is saved only for special occassions, and is usually only served annually. Thus, I wanted to be able to make it myself, so I can enjoy it whenever.

I made it for dinner tonight with for Shell and Steve. It didnt come out quite as good. It didnt taste the seem, or feel the same, but it did smell the same, so I guess Im getting close. It still tasted delicious. I’ll keep practicing, and eventually I hope to be able to create the dish that would resemble my Mom’s to some degree.

Next up- my Dads pizza!!!

How I Spent My 4th of July Weekend

It was a great weekend. The weather was perfect…no rain, not too hot, and a nice breeze to cool me down. Had a great time.

On Saturday Shell and me drove down to the Mohonk Mountain House and met my parents and sister there. The place had a nice 4th of July celebration thingy going on, so for a price you could go there for lunch and get to do some outdoorsy stuff.

We started off with a nice long hike into the wilderness. There are a ton of different hiking trails, and they all intersect at different points, so it was a bit confusing. The trails go through woods and caves, and there were a few different points of interest to check out. We also got to see some awesome wildlife. I got some pics of two fawns bedding on the ground in the woods, and my Dad was so excited to get to see his first raven. I also spotted a black snake, and I got a bit nervous when my Dad couldnt identify it. He is a pro at New York fauna and flora, and can identify pretty much anything. So when he didnt know what kind of snake it was, I snapped a quick pic and then backed away.

We also came across a lilypad-filled pond, which pictures do not do justice to. It was extremely colorful. There were also a bunch of bullfrogs you could hear but not see…they stayed pretty well hidden. As we left the pond, we came across an awesome-looking mushroom, and Shell just had to touch it. I then attempted to convince her it was poisonous and her finger would fall off, but I dont think it worked…

There was also this tower-thing at the top of a huge mountain. You could climb up it to the top observation deck, and there was quite a view. The wind was pretty strong up there, and kept blowing my Mom’s hair into an awesome comb over.

After the tower, we headed down to lunch. Lunch was the best part of the trip for me! They had a bunch of picnic tables set up outside, and after signing in you were able to help yourself to the buffet-type area. You started off alongside the grills, where cooks offered you burgers, hot dogs, ribs, chicken, and three types of sausage (I chose the kelbasa). They also ladled hot sides onto your plate, such as mac & cheese, scalloped potatoes, baked beans, and some other stuff. The cold salad bar was super stocked with all sorts of awesome stuff. There were plenty of salads and fresh veggies and fruits. I went a bit fruit-crazy, nabbing my first grapes and cherries of the season! Also had plenty to drink. Oh, and then came Cara’s favorite part…the dessert bar. They had about ten flavors of ice cream, a bunch of toppings, and then brownies, pies, cobbler, and other baked goods. We all ate like kings!!!

After that was done, we went for a short hike, then decided to check out the dock to see if we could rent a boat. Shell, Cara, and I ended up renting a paddle boat, and went paddling down the lake. It was hard work! Cara and me peddled, and Shell sat in the middle controlling the steering of the boat. We had a lot of fun. I was able to let my fingers drift in the water, and it was so warm! That was the highlight of the trip for Shell.

We got off the boat just in time to catch some weird parade. There were a lot of punk kids dressed in clown suits and other stuff, and they kept marching around. I think I saw the same people pass like three times. It was odd. We then headed to the hedge maze, which was pretty awesome. The five of us went in and quickly decided to go our separate ways. I think we all had the same idea to try and scare the others, except for Mom. She wised up to that pretty quick. I caught sight of her, and was stalking her from behind the hedge, waiting for an opening with which to strike. Suddenly, she bolted for the entrance and made her escape! She chickened out, knowing her children were plotting against her! So I ran back in looking for Shell and Cara. Eventually the three of us met up, and we began searching for the exit, when all of a sudden my Dad jumped out, scaring all three of us. I actually didnt realize that he had even come in initially, so I wasnt expecting it. We failed in finding the true exit, and ended up making a complete circle and ended up back at the entrance.

After that, we checked out the crafty gift shop inside the hotel, and then drove home. Once home, we hung out by the pool for a bit, and eventually I manned the grill and cooked up some chicken (regular and buffalo) and ribs. Mom also popped some corn on the cob down, and we had a very tasty dinner.

After dinner, we needed to plot out the plans for the nights fireworks. We had intended on going to Otisville, but it was canceled since the field was ruined due to all the rain. Instead, we opted to go to the Wallkill Golf Club. Shell, Cara, and I drove off to hit the club. On the way, we came across a bunch of people camped out on the side of the road, in front of some business. I realized that they must be able to see the fireworks from there, so we turned around, parked the car, and joined them. It was a smart move, as we were able to get out quickly later on, and didnt get bogged down in traffic at the actual club.

Anywho, we got there around 8pm, and found a nice spot on the grass. We spent the next hour ridiculing the other people around us (including the really annoying couple in front of us, in which the woman was like 10 years old and the old people behind us. There was also this ridiculous little girl who was running around to the other little girls, trying to join their families. Eventually the ice cream man came, but it was pretty chilly out, so ice cream was out. Around 9pm it got a little darker, and the bugs came out. I got a few mosquito bites on me from that. The fireworks didnt start until almost 9:30, but it was worth the wait. It was an awesome display, with all sorts of large, cool fireworks. There were these annoying little kids behind us who tried to guess what each firework explosion in the sky looked like. Some of the answers included: “George Lopez!“, “(one of the) Jonas brothers, “Michael Jackson’s car!”, and, my personal favorite, “The Mississippi River!”. Once it was over, we were able to get out rather quickly and headed home.

The rest of the night died down quickly. We had some watermelon and ice cream, and eventually went to bed exhausted at 11:30ish.

All in all, it was a great day. I really had a great time with the family. My only regret was that my bro-in-law Nick wasnt there. I know he would have appreciated the awesome lunch spread we got at the place. Plus if he was there, I may have been able to sneak the Wii down for some nighttime gaming.

Needless to say, it was a very great time, and it was how I would always want my Fourth of July to be…grilling food, being outdoors, and finishing the day with a nice fireworks display.

Mmm…Steak…

I remember being a very picky eater as a kid and teenager. If we went to restaurant, I wouldnt want to go unless burgers were on the menu. I recall going to places like Olive Garden and Red Lobster, and only eating chicken fingers. However, I eventually became a “steak man”, as I am today. Sadly, I still remember the day it happened.

The family and I were vacationing in Niagra Falls, and we went to a very nice restaurant. The special of the day was a prime rib. I wanted no part of it, but no Dad got mad that all I ate was burgers and stuff, so he coerced me into eating it. He regretted it in the end though, as I fell in love. From that point on, for the next few years, I only ordered prime rib!

Today, my favorite cut of meat is ribeye. Its such a tender, delicious slab of tastiness. Its like biting into a bloody cloud of heaven. I like pretty much all steaks, but ribeye is the best.

The reason Im writing all this is because we are watching Iron Chef right now, and the secret ingredient is cowboy ribeye steaks, which are an extra-thick cut of ribeye. It looks so tasty…I wish I could pull the steak out of the TV, like in Willy Wonka…
