Low-Fat Chocolate Chip Cookies

This recipe I pretty much came up with on my own. I went to Cara for some advice, but for the most part I took guessed on everything and went with the flow. These cookies are a little healthier since I only use one egg, replace 1/2 the usual butter with apple sauce, and use dark chocolate chips as opposed to milk chocolate. A bit of a note though: since I use apple sauce, the cookies will come out softer and won’t get crispy due to the added moisture. It kind of reminded me of a pancake. So if you want a crunchy cookie, this recipe is not for you. If you want a tasty snack that is a little healthier, than this one is for you.

Ingredients:

• 1cup flour
• 1/2tsp baking soda
• 1/2tsp salt
• 1/2cup granulated sugar
• 1/4cup brown sugar
• 1 egg
• 8TB Butter/Margarine
• 1/2cup apple sauce (plain- don’t buy the one with cinnamon)
• 1/2tsp vanilla (can be real or imitation)
• 1/2cup dark chocolate chips
• 1/4cup chopped nuts (I use walnuts)

What You Need:

• Mixer
• Mixing bowl
• 1/2 tsp, 1cup, 1/2cup, 1/4cup measuring utensils
• Wooden spoon
• Pam (or other cooking spray)
• Two baking sheets
• Cooling rack
• Cutting board
• Utility knife
• Spoon
• Kitchen Timer

So whenever I’m going to cook, I always take the time to get everything I need out before I actually start. This way I’m not fumbling for something at the last minute with dirty fingers or anything like that. As you see above, I listed all my ingredients and materials, and arranged them on the counter so that everything was out and ready to go. This is definitely an essential step to make cooking and baking as stressless as possible.

So once you have everything together, let’s start making these cookies!

Procedure

1. Preheat the oven to 375. This will allow it to preheat while you make the dough, so by the time you’re done the oven will be all set.

2. You will be mixing together most of the dry ingredients, which means the flour, baking soda, salt, granulated sugar, and brown sugar. Measure out the ingredients and dump them into the mixing bowl.

Once all the ingredients are in, insert the beaters into the mixer (while its unplugged), then plug it in, and mix the ingredients on the lowest setting. As you go, you may see some larger chunks of ingredients, particularly the brown sugar. If this happens, simply take the wooden spoon and manually smash up any of the chunks you come across.

Continue mixing until everything looks pretty well blended together.

3. Add the wet ingredients, meaning the egg, butter, apple sauce and vanilla. For the butter, one stick generally comes out to 8 TB’s. However, to make it work best, you want to soften the butter, not melt it. So I suggest taking it out of the fridge, and when you’re ready to add it, remove it from its wrapping and pop it in the microwave for about ten seconds. This will soften the butter, but it won’t start getting wet and melted, so it will be perfect. Another note is in regards to the vanilla: for some reason, that stuff is expensive as heck! Shell and I usually buy imitation vanilla for a fraction of the cost.

So just go ahead and throw all these ingredients into the mixing bowl, then use the mixer to combine it all together (make sure you use the lowest speed setting!)

Remove the mixer and use a wooden spoon to scrape the sides and bottom of the bowl, and then continue mixing until everything is combined and looks like cookie dough (make sure there are no patches of dry mix anywhere.)

4. The final step in making the dough is adding in the chocolate chips and nuts. I used walnuts, but you can use whatever you want. Place some of the nuts on a cutting board, and use a sharp utility knife to finely dice them into manageable pieces…remember, no one wants to find a whole walnut in their cookie. But then again, they are your cookies, so make the nuts as big or small as you want! After you dice a few up, place them into the 1/4 measuring cup and repeat the process until it is full.

After adding the nuts, go ahead and add in the best part…the chocolate chips! You can use any, but dark chocolate is the “healthiest” for you.

Once both the nuts and chocolate chips are in the mixing bowl, pop the mixer in there on low and stir it up one final time to get the chips and nuts evenly dispersed throughout the dough.

5. Once the dough is ready, these cookies are almost ready to go! By now the oven should be preheated to 375. Take one of the baking pans and spray it down with Pam or some other non-stick baking spray.

Then you will begin placing the dough onto the pan. Take a melon baller or some other small scooping device (if you have nothing fancy like that, a regular spoon will work just fine), and use one scoop per cookie. So you will place it into the dough, take a scoop out, and then place it on the baking pan.

With my pan, I fit sixteen cookies on there, making four rows of four. You can fit more on there if you want smaller cookies, or less if you want bigger ones. Just leave some space around each cookie, so that when they cook and expand they won’t get all stuck together (I should take my own advice, as you will soon see.)

6. So now it’s time to bake! Place the cookies in the oven, and set your timer for ten minutes.

Now, with all the dough we made, you will have more in the bowl still, enough for a second baking sheet. I highly recommend only cooking one batch (one baking sheet) at a time, to ensure that the temperature remains correct. So while the first batch is cooking, you can go ahead and pan up the second batch. Scrape every last drop out of the bowl to make sure you get as many cookies as possible. When you get to the end, use a regular spoon to grab the rest.

I got thirteen cookies out of the second batch, meaning I got a total of twenty nine cookies. You can get more or less depending on how big you make your cookies (and how much cookie dough you snack on during the cookie process!)

Once the cookies are all panned up, it’s time to clean up. I am a neat freak, and even though I tend to make a mess when I cook, I go nuts cleaning it up at the end. So pop all your dirty utensils and other stuff in the sink and start scrubbing. What else are you going to do while you wait for your tasty cookies to finish baking? Also, make sure you wipe down the counters, stove, and other areas you were working on.

7. Once the ten minutes is up, take the cookies out and check them out. They should be a dark brown and…well, you should know what a cookie looks like! To test to make sure they are done, stick a butter knife into the middle of a cookie and check to see if there’s any batter on there. If there is, put the cookies back in for a minute or so and check again. Both my batches were done within ten minutes.

Here’s my first batch. As you can see, I definitely placed them too close together, and they stuck. That’s not such a big deal though…just take a spatula and separate them. They won’t come out as perfect circles, but as long as they taste delicious who cares how they look. As you can see, my second batch came out a little better.

Once you take them out, DO NOT take them off the baking sheet immediately. They need to cool on the baking sheet before you remove them, or they will be way too soft, and will fall apart. Give them about ten minutes, and then carefully use a spatula to remove them and placing them on a cooling rack or separate plate.

Once they are cooled off, enjoy!

YesterdayI made some low fat chocolate chip cookies, so I decided to try my experiment here as the first of what will be several (and maybe many) of my step by step recipes. So as some of you may know, I have been on the sub list in the area since January, waiting to be called in. From then til last week, they had called me a total of three times, always in the late morning (like 10:30am) expecting me to get there by 11:00am. Well, last Friday morning I had my first call that I was able to do, and then yesterday and today this week I was also called in, so I’ve been working for the past three days. It feels good to finally be out there getting paid and getting some additional classroom experience. However, none of my assignments have been “normal” teaching assignments…

My first day (Friday), I was assigned to a school about 35-40 minutes away from my apartment. I was told to go to the high school, but when I got there they told me my assignment was subbing for a middle school Teachers Assistant (which I will henceforth refer to as a TA). So I went down to the classroom and discovered that I would spend the day working one-on-one with an autistic student. The student was very pleasant, and was not shy or over excited. We worked pretty well together. I taught him some basic math addition and subtraction through word problems (ex- if there are twenty students in the class and twelve are girls, how many of the students are boys?), helped him write a simple essay about Naruto, and read some books together. One of the best parts was when he pulled out a Simpsons comic that the regular teacher and him had been reading together! While I did enjoy working with him, as I have the patience to help him out, I did get kind of bored remaining in the same room most of the day. Granted, we got to leave the room when I went with him to art and chorus, but the majority of the day was spent in the resource room. However, I did enjoy it, and would do it again if the opportunity arose. With the difficulty I have with finding work, I’ll take what I can get.

Yesterday I was assigned to a high school about a 1/2 hour away. On the phone I was told it was a foreign language class, and when I asked they did not know which language it was. I assumed it was Spanish (or at the worst, French), but knew I could handle it, so I agreed. When I got to the school to sign in, the secretary joking asked me “I hope you know Russian,” to which I laughed and said, “I wish.” Little did I know that she wasn’t really joking, and I was subbing for a Russian teacher. Apparently, the school demographics are made up of quite a few Russian/Slavic families, so offering Russian was something that the students and families were interested in. Well, as much as I like the history of Russia, I don’t know anything about how to speak it or read it. The problem with Russian is that it does not use the same alphabet that English, Spanish, and French do, so I could not even read the students words, much less read their work and assignments.

To make matters worse, the teacher left me very vague instructions, and they were worded as if I was expected to keep teaching the students new material. For example, in one class he told me that I should, “continue teaching students new vocabulary words from where I left off on the list.” How the heck am I supposed to teach new words if I can’t read or pronounce the words in the first place?! It proved to be a very frustrating experience, coupled with the fact that, since I couldn’t read or speak Russian, the students did not take me as seriously. By the time the final class of the day rolled around, I was pretty stressed and exhausted. That class was the worst of the day, and very few actually did any work. In the end, I found it was easier to make a list of the students who did their work as opposed to those who chose to be disruptive.

Today I was back at the first school, subbing as a TA. This time, I was assigned to float around in a variety of  different integrated classes (where students with minor learning disabilities take part in regular classes). Basically my job was to float around the room and make sure the students were paying attention, help them do the work, and answer their questions. Today I worked with a math class teaching how to graph coordinates, a science class teaching weather (such as hot and cold fronts), another science class teaching Newton’s laws, a social studies class teaching about the origins of Rome (Romulus and Remus), and an English class helping students prepare for state exams. I also had two assignments in the resource room, where I helped the other TAs give the students extra guidance by helping them prepare reports, do homework, and organize their notebooks. Of my three assignments thus far, I enjoyed today’s the most. I liked being able to jump around to different classrooms, and the students I worked with were all very nice and funny. I also got to work with the TAs I have worked with already, so I didn’t feel lost and like I didn’t belong in the school.

Overall, I’m just glad I’m finally getting paid to do something. While I won’t deny enjoying sitting home all day just hanging out, I’m glad that I am out and about…I think I was starting to get cabin fever! I hope I continue to get assignments so I can continue to go out there, get paid, and gain more experience which will help me land a permanent job eventually.

Yeah, I know I haven’t done much on here the past couple of days. I have to excuses for that.

For starters, I’m finally working. Tomorrow will be my third day as a substitute teacher. So far I’ve worked as a TA for an autistic student and I’ve subbed for a Russian class (as in the language). Both experiences were interesting, but I’ll get into more detail in a future blog.

My other (somewhat lamer) excuse is that my laptop keyboard is falling apart. The s button barely works, and since it is a letter that is used extremely frequently, it aggravates the crud out of me to type for too long. However, I ordered a replacement keyboard from ebay today, so I will be fixing that little annoyance soon.

I am working tomorrow (subbing as a TA again), but I will try to sit down when I get home and start working on a blog detailing my first three days of subbing. All I know is that it feels good to be bringing home the bacon, and not totally bumming of Shell!

So I would say for over a week now, the cats have been fully integrated together. We no longer close Odin in by himself at any point, as the two of them have come to love each other. It is not uncommon for Odin to walk over to Loki and start licking his face, or for Loki to come over and lay down next to Odin. They continue to fight occasionally, but I think it is more playing around than anything. They can be near each other without having a fuss, so I think they are just rough-housing as any siblings do.

Odin’s personality is definitely starting to come out. He is a bigger mush than Loki, and will never object to be held or cuddled. He is constantly laying with us at night, where as Loki always preferred to lay down wherever he wanted, usually not with us. One thing is for sure…he likes food. While he is a fan of his cat food, he prefers “people food.” Last weekend Shell baked some fresh muffins, and placed the extra in a plastic bag. A little later on I was chasing Odin through the apartment as he had the bag of muffins in his mouth, took them under the futon, and tried to eat them. And let’s not forget the time he started drinking milk out of Shell’s glass, got his head stuck, and ended up shattering the glass (no worries- he was unharmed.) I have also caught him going through the garbage, which led us to have to go to Wal-Mart and buy baby-proof cabinet locks. He’s definitely been a handful, but his love and cuteness make up for it.

Loki has been taking it all in stride. He has definitely mellowed out since Odin came into the picture, so I think he really was lonely, and is happy having a brother. While Odin is usually the antagonizer, Loki has been known to come up to Odin while he sleeps and lay down on top of him. Loki will still follow Odin around, and always seems to be watching him. For example, if Odin is playing with a toy Loki will come out of wherever he was and just watch from a distance.

In the end, it seems like everything is going good. Both cats are happy and healthy, and Shell and I are really glad that we decided to adopt Odin. They get along very well, and are able to share their food and litter with no problem, which is awesome. The only bad thing to come out of adopting Odin is that now I have to clean the litter box out twice as often, and since they are currently eating a small amount of wet food daily (to fatten Odin up…I give it to Loki too so he doesn’t get jealous) and are extra stinky.

So Comedy Central officially announced today that they will be airing a new season of Futurama in June. The four movies that were made were decent, but not necessarily classic Futurama (with the exception of the first, Bender’s Big Score), but hopefully they will be more successful in creating 22-minute episodes. I have high hopes for the series. I really missed the show…it’s so under-appreciated.

Can’t wait til June!!!

Once of my most favorite games from the PS2 was Dynasty Warriors 4. I had never played any of the previous games in the series, and it was by far one of the best co-op games the PS2 had to offer. It was a perfect hack-and-slash game where you and a friend could just run around with swords and cut up minions and tough bosses. I’m not joking when I say that one of my most fond gaming memories was when Steve and I first laid eyes on the badassness that is Lu Bu. That being said, I have played the older and newer games from the series, and I have always compared them to Dynasty Warriors 4. The older ones were a bit too slow, and the newer ones tended to focus more on strategy and unit management more than just tried and true mindless hack-and-slash action. Luckily, Dynasty Warriors Strikeforce is extremely successful in focusing a lot on the action, while at the same time intergrating a great RPG aspect, bringing the game to be the best in the series.

For those who are not familiar with the series, let me just take a moment or two to explain why it’s so awesome. Dynasty Warriors is loosely based on actual Chinese history, and you take control of one of many historical figures who were in China when the game takes place. To be more specific, it is based on the text “Romance of the Three Kingdoms” Now, I say loosely because there are near-invincible characters, magic, and, depending on which faction you play as, may not be entirely accurate (ex- your faction lost a battle historically, but you won that battle when playing.) So the game revolves around you choosing a faction (Wei, Wu, Shu), and taking their officers into battle against rival forces. Since it takes place in ancient China, the weaponry is basically swords, spears, bows, etc., with some other ones thrown in (like fans and clawed gloves.)

But enough of that. Let’s get into what makes Strikeforce such a great game!

So right off the bat, the game is a mixture of hack-and-slash and RPG. After selecting a faction and starting character, you begin the game at your city. The city is a central hub/lobby in-between the action where you go to do most of the RPGish stuff. You can buy usable items, which is a great improvement over previous games. In the past, to get health you had to hope that you found food items either in boxes or dropped by enemies. With an inventory, you can now use health items whenever you need them when in battle, which is a really good thing since this game is by far the most difficult to play. The items range from restorative (health, fury, remove status effects, etc.) to giving you an ability for a limited time (ex- float for a brief period). You can also sell extra items for gold.

More importantly than the item merchant is the blacksmith. In Strikeforce, every character has two weapons- a main weapon and a sub weapon. The sub weapon can be anything you want, but the main weapon must always be the same. For example, I am using Xiahou Dun, who always has a cudgel, which is a kind of blunt staff/club. You can buy new ones, but the main weapon must always be the same as that characters default, meaning that I can only buy Xiahou Dun cudgels if I want to get him a better main weapon. The blacksmith can also add to or raise the special stats on your weapons. You can add extra attack, defense, range, elemental damage, and more to weapons, though weapons can only hold a specific number of stats, depending on the weapons level.

Using the orb shop and the academy will further give you additional stats and boosts. Orbs can be placed on weapons to give them even more stats, but with more effects, such as increasing the chances of enemies dropping items. The academy is used to get Chi orbs, which are equipped directly to your hands and feet. The Chi orbs give you additional abilities, such as jumping higher, floating, running faster, etc. By using the best orbs and Chi you can get, you can give your character a big advantage in battle. (Note about the below pic- the game is in English, I just couldn’t find a English image of the city)

Enough about the town. Lets get into the action! So once you have your character fully stocked up and ready to go, there are two ways to get into battle. Talking to the guard by the gate will advance you to the next mission in the storyline. On the other hand, there is a “job wall” of sorts, which lists all the side missions currently available. Every mission has an objective (which is usually to defeat a particular person) and one or two bonus objectives, which will get you extra gold, xp, and items. After selecting your mission, you will appear on the battlefield, and the fun begins. Now you (and up to three other characters) will do battle across several different maps as you make your way to your objective. I said “up to three characters”, and what I mean is that this is a four-player game. If you are playing alone, you can assign up to three other officers to accompany you to battle. This is good because it will allow you to level up four characters at once. Unfortunately, you cannot change characters once in battle. You will be able to give them limited orders which consist of telling them what kind of enemy to target (infantry, bosses, or traps) or to just follow you around and attack whatever they see (which is safest.)

Now lets talk about multiplayer. Strikeforce made a huge, awesome leap by being the first in the series on Sony to allow online co-op. Traditionally it has always been two player local split screen co-op, but Strikeforce busts it out with up to four player online co-op, which is a blast. Once you are ready to play online, you can either invite people to your city, or you can find someones to visit. Once there, the host picks a mission, and everyone else joins in. Any items or xp you receive in the other players mission will be brought back to your single player game when you’re done. Also, which I like, is the fact that after each co-op mission, you are brought back to the city, so everyone can stock up and prepare for the next mission. Thus being said, I will say that this game offers four player campaign co-op, which is hard to come by, particularly on the PS3. Another cool feature of the co-op is that your and your friends can trade officers, so that if your friend has a character you want, or wants to help you level up a particular character, you can swap them and then re-trade later on if you want. I had no trouble finding a game to play, and through the city and the mission I experienced no lag or anything else annoying. It seems to be a pretty flawless online experience.

One of the last things I want to get into (gamplay wise) is the Fury mode, which in previous games was known as Musou mode. As you take damage and dish it out, your fury gauge will build. Once it’s maxed out, it is fury time. When activated, your character will become extremely bright and will change physically (some nearly double in size.) While in this mode, your attack and defense rise, and you gain a new, more powerful charged attack. As long as you continue to defeat enemies, you will constantly regain fury. However, as in previous games, once in fury mode you can release your musou attack, which is a powerful combo that will knock down many of the enemies around you. Unfortunately, it seems to be weaker than it was in previous games, and you will not be getting as many kills.

Now no game is perfect and flawless, and Strikeforce is no different. I mentioned earlier that the game is more challenging, which is one of the reasons I think they threw in the usable inventory system. The game is difficult, plain and simple. Like the previous games, there are times when you will get stuck in an enemies unblockable combo and lose more than half your health before you can recover. You will also spend a lot of time knocked down on the ground, all through there are Chi orbs that will help you out in this respect. So I guarantee you will be cursing out cheap enemies from time to time. Another problem is the lock-on system. It’s a real joke, and I wouldn’t recommend using it. If you lock onto an enemy, you will find the camera to be out of whack, and you will quickly lose your orientation in the game. The camera will ofter position behind a wall, so you won’t be able to see your character or your target. The game is very fast paced and camera control is important, and if you are locking onto a particular enemy, you cannot control the camera. That being said, the camera and lock-on targeting could have used a little work.

So Strikeforce pretty much does it all, and it is a huge victory for KOEI. The addition of four player online co-op, the return to pointless (yet highly entertaining) hack-and-slash mayhem, the huge screen filling boss monsters (something new to the series), and the RPG elements all combine to make one beautiful, addictive game. There is a huge amount of replay value between the three campaigns, over-abundance of playable characters, and the online modes. Also, the game’s simplicity will appeal to anyone, and I can’t see anyone not enjoying this game. The few minor flaws are over-shadowed by the sheer brilliance of the rest of the game.

Do yourself a favor, and definitely check it out. It’s a must-play (and in my opinion, a must-buy.)

So last night, it was around 10:00pm, and I was ready to get my game on. Before I hopped on, I checked my e-mail and checked out joystiq, and I saw a notice that the PS3 was busted, and warned against turning the PS3 on. While it wasn’t entirely clear what the issue was, I didn’t want to risk anything, so I didn’t go on.

It has now been about 22 hours, and the PSN is still messed up. Reports have been flying around that you can’t play most games, and that you will run the risk of losing trophies and save files. While I did not experience any of this personally, Steve happened to be on his PS3 last night.

Steve was playing Fallout 3, and he had no problem actually playing the game. He did realize two things though. First, his save files were getting the wrong date imprinted on them. Secondly, he was unable to see his Fallout 3 trophies. What will become of his saves and trophies?! We will not know, until it is safe to turn the system back on and to look over the damage.

The worst part is that I received Dynasty Warriors: Strike Force in from Gamefly, and I can’t play it!!!

So I’ve never made it a secret that I hate Crosby, as I have complained about him in the past. However, after my last post about him winning the gold medal, I realized he never made my Shit List. Well, I just remedied that. So in writing that last post, I really had a blast finding awesome images on Crosby online, and I decided to devote this post to the various reasons I hate him. Mind you, some of these images will be repetitive from past posts, but most will be new.

• He’s a baby- probably my most-used pic of him. I just love his stupid little face as he is probably whining because someone just called him Cindy, or because someone pushed him a little too hard, and he skinned his widdle knee

• He’s a freak- I mean, come on, who the hell sleeps with the Stanley Cup?! Is he really that lonely that the cold, hard metal is comforting to him? Or maybe he just needs reassurance. Or maybe he is kinky and likes metal objects up his…

• He sucks- the shirt says it all

• He thinks he’s God’s gift to the ladies- the problem with him being so highly praised is that he didn’t take it well, and it all went to his head. He believes that he is hot shit, and can do whatever the hell he wants. I mean, just look at this pic…you don’t see other NHL players walking around topless. He’s like Tiger Woods- he thinks he’s the best in the business and can get away with anything…I just hope his miss’ beats him up!

• He is a cheap player- sure, he has some hockey skills, but one thing he does well is taking dives. Nothing annoys me more than when a player tries to ham it up in order to draw a penalty, and the fact that Wonder Boy does it makes me hate him even more.

• He’s pug-ugly- not even a professional artist doing his portrait can make him look good

I’m sure I will make a sequel to this the next time Crosby really pisses me off. I hope you enjoyed seeing what an utter failure of a human he is.

There were only 24 seconds remaining in the third period. Team Canada was in the lead by 2-1, and they were certain that victory had been achieved. Suddenly, to the shock of all, Zach Parise comes out and nets himself the tie-breaking goal, allowing the game to move into overtime. It was something out of a movie, with a team coming back with seconds to spare, and tying the game up so that there would be a chance to win in overtime. Unfortunately, this would have been a messed-up movie, because the evil antagonist prevailed. He’s the guy you love to hate, ugly, arrogant, egotistical, over-rated…it’s Baby Crosby. And he was the one who scored the game-winning goal for Canada, making him a national hero.

While I was obviously rooting for the U.S. team to win, I would not have been upset if it had been anyone else but Crosby who scored the winning goal. I have nothing against team Canada, and I will attest to the skills of all the players. It’s just that I hate Crosby, and the fact that he is the reason Canada won is why I am taking this so hard. Crosby didn’t need this to inflate his ego any more…I’m in shock that his head didn’t explode when they placed the gold medal around his ugly neck.

He’s been an over-rated player for years. Sure, he has some skills, but people who say he is “the best in the NHL” are sorely mistaken. Also, as the above picture states, he is a big baby. He is always complaining about how the other teams attack him. Of course they are…being the “superstar” that you are makes you a target. He’s also not beneath taking a ridiculously over-the-top fall and hamming it up just to get his team a measly two-minute power play. So take his “legend”, and add the fact that he was the youngest captain in the NHL, was the youngest captain to win a Stanley Cup, and now throw a gold medal into the mix, and you have yourself one hell of an egotistical moron. If the above doesn’t prove it, then this magazine article will:

I congratulate Canada for a great game, and a job well done. It was a really good game, and both teams were in excellent form. It’s just a shame that Canada owes more to its precious Baby Crosby than it did before today…
