We Italians Need a Holiday Too!!!

Sure, I like St. Patrick’s Day for the annual corned beef meal, but that’s about it. You won’t catch me wearing green, I won’t down a Guiness, and, long story short, I won’t go around pretending to be Irish, like so many people do. All too many people make believe that they are Irish for a day (and the weekend before, and the weekend after) during St. Patrick’s Day, and run around going bar-hopping and acting like fools. Now if you’re of Irish decent, I have no beef with ya…it’s your holiday and you do what you like. But there are more non-Irish people celebrating it here in the States than those who are Irish, and for that I say boo.

So on that note, I want to make my voice heard for all us Italians out there, that we want a holiday too. I mean, just picture how awesome a holiday would be if the Irish stuff was replaced by Italian stuff. For example, everyone would down awesome, delicious wine rather than beer. And let’s face it, wine is tastier than beer, goes better with a dinner, and gets you feeling good faster than a bottle of beer would. Secondly, the food. Screw the corned beef, cabbage, potato, and Irish soda bread. Sure, it’s a decent meal, but what about a GREAT meal?! Picture it: lasagna, baked ziti, meat pie, chicken cacciatore, veal piccata, sausage and peppers, pasta, meatballs, fresh warm Italian bread with some extra virgin olive oil, balsamic vinegar, and seasonings to dip it in…mmmm my mouth is watering just thinking about it!!! And what about dessert?! To be perfectly honest, I don’t even know what an Irish dessert is, but look at Italian desserts: cookies, cannoli, spumoni, tiramisu…simply fabulous!

So while I don’t mean to bash Irish cuisine and culture, I’m just saying that Italians need an ethnic holiday in the U.S. too. To be quite honest, both the food and drink are better, and I think people would have a great time getting drunk on wine and eating warm, hearty food. Easter is kind of a good example, so maybe that counts? Or maybe Columbus Day? Don’t start hating on me and telling me about all the bad things Columbus did…I’m a historian, so I know. However, it is an important holiday to Italian-Americans, and maybe more of us should start embracing it as such, rather than for the man himself.

Corned Beef and Cabbage (a la Crock Pot)

Happy St. Patrick’s Day everyone! Seeing how today is indeed St. Patty’s Day, I’m cooking up the traditional corned beef and cabbage dinner…in my crock pot! The crock pot is so easy to use and takes little time. Prep time is typically short, and once it’s in the crock pot, you pretty much just set it and forget it. Then when dinner time comes around and your stomach is grumbling, your meal is fully cooked, fresh, piping hot, and ready to be devoured. Enjoy!

Captain Morgan’s Lime Bite

I’ve been seeing billboards around town for the new Captain Morgan Lime Bite alcohol. I didn’t know what it was…I assumed it was like a hard limeade, similar to Mikes. However, seeing how Captain Morgan is my liquor of choice, I knew I wanted to try it. So when Shell and I went to Salsa Latina tonight (the best Mexican restaurant ever) and there was an ad for Lime Bite on the table, I had to give in. I ordered one, and the waiter asked which beer I wanted it to go with. Eventually I realized that it was a lime-flavored liquor, and I decided to try a shot of it in my Tecate.

It was really good…so good in fact that I am planning to pick up a bottle of it soon. It adds a nice lime flavor to the beer, and is successful in eliminating some of the “bite” of the beer. Shell, who normally hates my Tecate, actually took two sips because she couldn’t believe how good it is. I’m not sure how it would go with all beers, particularly Sam Adams, but with the Mexican beers like Tecate and Corona, I can see it blending together very well for a great, smooth taste.

While it was great in my beer, I would love to try it in other stuff, particularly a lemon-lime soda like Sprite and Sierra Mist…and maybe even in ginger ale. The ads also have other recommendations for it, such as adding it to juice and other mixed drinks. Being the Captain Morgan fan that I am, I will be willing to part with the spiced rum from time to time to have some Lime Bite instead.

Low-Fat Chocolate Chip Cookies

This recipe I pretty much came up with on my own. I went to Cara for some advice, but for the most part I took guessed on everything and went with the flow. These cookies are a little healthier since I only use one egg, replace 1/2 the usual butter with apple sauce, and use dark chocolate chips as opposed to milk chocolate. A bit of a note though: since I use apple sauce, the cookies will come out softer and won’t get crispy due to the added moisture. It kind of reminded me of a pancake. So if you want a crunchy cookie, this recipe is not for you. If you want a tasty snack that is a little healthier, than this one is for you.

As you may know, I enjoy dabbling in the kitchen. I don’t make anything super fancy, but I can hold my own and make some great stuff. Lately, I’ve been wanting to start putting some of my recipes on here as a step-by-step blog.

YesterdayI made some low fat chocolate chip cookies, so I decided to try my experiment here as the first of what will be several (and maybe many) of my step by step recipes. One of the best things I make is chili, and maybe I’ll share it with you next time. Be sure to check out these posts and maybe you can start making great stuff in the kitchen as well!

Fettuccine Alfredo w/ Bacon

For dinner tonight Shell made a tasty fettuccine alfredo, using a light sauce from scratch. Also, she cooked up some applewood smoked bacon, and added that to the pasta. It proved to be quite the delicious meal, as the bacon tasted great with the pasta and sauce.

Holiday Cooking Complete

After returning from church this morning, the rest of the day was devoted to cooking. Shell finished up making her Christmas cookies. I think she made six different kinds, and I made two myself- white chocolate macadamia and some red and green sugar cookies. Shell is giving out some cookie tins to her co-workers, and the rest of the cookies are for our parents. They all came out pretty tasty.

Also, Shell took the time to make one of the best family recipes…the meat pie! My mom’s meat pie is one of the family favorites, and my second favorite (trumped only by her chicken cacciatore). Its a delicious puff pastery-type thing that is filled with Italian meats and cheeses, and is simply awesome! Its not very often that my mom makes it, so I dont get to enjoy it too often. However, now that the recipe is here, maybe I will get to munch on more.

Labor Day at Lake George

We decided to spend the day at Lake George today. Its only a little an hour from our apartment, and we thought today would be a good day, since we both had off. It was cloudy and cold in the morning, but eventually the sun popped out for the remainder of the day.

We started off with some light shopping. Shell wanted a caramel apple, and we found them. She bought hers just as it was made, so the caramel was hot and gooey. I preferred my chocolate apple, which had a light layer of chocolate so that it didnt crumble when you bit into it. It was a good snack before lunch.

We then took a boat tour of Lake George on the Minnie-Ha-Ha, which lasted about an hour. It was a decent sized steam ship, and took a lazy tour to a certain point on Lake George and then turned around. The Captain did the usual sight-seeing speech, noting all the ridiculous summer homes, hotels, and camps lining the shores of the lake. What I didnt know was that there were some British ships that remained sunken in Lake George, and there are markers attached to them so you can see where they lay from the surface, though you obviously cant see down far enough to see the actual boats. Shell and I got seats on the bow of the ship, so we had a decent view. The way out was relatively warm, but on the way back the wind really picked up, and it was a little chilly.

A New Record…I Cook Three Nights in a Row

Shell felt a little better today. We were able to go out to church, and then do some wedding invitation shopping and what not. When we got home she was exhausted, and crashed for a few hours. After watching Simpsons and playing some PS3, realized that once again, if I wanted a hot cooked meal, I would have to do it myself.

I started by making up some edamane, which we fell in love with when we were out in Vegas at a sushi restaurant. They make the perfect little appetizer/snack. After that I ended up making chicken fajitas. I cooked up some peppers, onions, and garlic in one pan, and the chicken in another (once again making a bigger mess than was necessary.) I also reheated some of the cornbread I made on Friday, and we had a good meal.

Chef Rob the Past Two Nights

I have been craving my chili all summer. However, I know better than that, because its kind of too hot during summer to eat chili. But I couldnt stand it anymore. So yesterday morning after Shell went to work, I headed off to Wal-Mart and picked up the ingredients I need to make chili. I then came home, popped everything into the crockpot, and let it do its thing.

As it was getting closer to Shell getting home, I realized we only had one piece of cornbread left! So in a desperate maneuver I ran to her recipe box, pulled out the one for cornbread, and proceeded to blindly attempt my first bread-baking ever. I can cook all kinds of stuff, but I never really tried baking, or making stuff with a batter. Needless to say, I was pretty nervous.

The chili and cornbread both came out excellent. My chili was as awesome as always…not too hot, but still a bit of a kick. The cornbread was awesome, and tasted just as if Shell made it. It was pretty tasty indeed.

The Gilded Otter Brewing Company

Shell and I met up with Steve and his friend in New Paltz last night, and had dinner at The Gilded Otter. I had originally heard of the place from a friend, and we were going to go with them, but when we got there the parking lot was 100% full, leaving us nowhere to park, so we didnt stay. We went to New Paltz last night since its kind of a half way point between Steve and me.

The Gilded Otter is a restaurant/brewing company. They produce several different beers at the place, and feature it with their food. Shell and I got there a little before Steve, so we went up to the bar and got our drink on a little early. I tried their Hefeweizen beer, which was pretty awesome, and had the faintest taste of banana. I had never heard of Hefeweizen until a few weeks ago, when it was in my Sam Adams summer collection of beers I bought. I liked Sams Hefeweizen also, but the Gilded Otter’s simply blew it away. Shell partook in her drink of choice; hard cider. The Gilded Otter does not make their own hard cider, but they bring it in from Warwick, which is also a local producer.

Eventually Steve and his friend got there, and we sat down at a table. Steve and I ended up ordering a sampling of their beer. I forgot what the exact name was, but it consisted of eight small glasses of each of their draft beers, along with a card so you knew what you were drinking. They were all pretty good, and after sampling them all, I still thought their Hefeweizen was the best.

So now onto the food. The menu at The Gilded Otter is extensive, and has some classics (wings, mozz sticks, calamari, etc.) as well as some upper-scale foods you wouldnt normally find at a bar/pub (smoked trout mousse, stuffed grape leaves, and mussels.) We stuck to the classics for appetizers and ordered chicken wings. There was mild, hot, and BBQ, and we went with hot. It was a very good hot wing sauce, and had some nice heat to it. For dinner I ordered braised short ribs, which was awesome. The side it came with was horseradish mashed potatoes, gravy, and squash. I wasnt a big fan of the potatoes (since Im not a fan of horseradish), but with the gravy and squash mixed with it, I enjoyed it. Steve got an order of jambalaya, and he was pleased with the heat and spice with it. Steve’s friend and Shell both had a bowl of spinach fettuchini and a bolognese sauce, which was also excellent. We also ended up ordering dessert. Shell and I split a slice triple chocolate cheesecake and Steve had a chocolate peanutbutter pie.

The Gilded Otter is freakin awesome! The beer is great, the food is delicious, the service was fast and pleasant (Steve had fun pestering the waitress as usual), and the overall atmosphere was pretty cool. I would totally go back, and I recommend anyone who is close by to go check it out. Heck, its worth the 1 hour 15 minute car ride for me!

Down Home with the (soon to be) B.’s

We were watching TV last night, and happened across a show depicting the career of the Neelys, who are a husband/wife duo who have several shows on Food Network. Shell wanted us to cook together in the kitchen, so tonight we did just that.

We made a jambalaya. I cut up the peppers, onions, shallots, garlic, and sausage while she peeled the shrimp and cooked the rice. I then started up the pan and threw in the stuff, and Shell added the shrimp and some seasonings. It wound up being a really tasty meal. Was it luck? Or was it that when our powers combine, we are unstoppable in the kitchen???

All in all, not only was the food tasty, but it was fun too. We had a beer while cooking, and also snacked on some carrots while the dinner cooked. We were home together all day today, so it wasnt as big a deal, but I think it will be cool to do on days when we dont see each other the entire day (while she works and Im schooling it up.) Im sure we will be doing this more often. Its a lot of fun, and something that all couples probably should try out.

My Weekend in Brooklyn

Shell and I went to visit my sister and her husband in Brooklyn this weekend. We had a blast hanging out with them, and had a pretty busy weekend.

Shell and I left on Friday night. We ended up running late, and Shell was flying to get to the train station. We pull into the Poughkeepsie station and watch in frustration as the train leaves the platform. Luckily there was another train an hour later, so it wasnt that bad.

The train ride was a nightmare, as it was one of the more uncomfortable trains. The worst part was the people in front of us. Directly in front of us were seven Scottish/Irish/British punk kids.  They were crowded into two seats, so they  sat across from each other. They were playing some weird variation of poker and blackjack, where they wagered and used poker hands, but at the same time, they were trying to reach and not go over 100. The weird part was their wagers, which I will not get into details on this blog, but it will suffice to say that their antes referred to “sexual actions” that they would do either to themselves or the others around them. This is not to mention that they were extremely loud, and I think I speak for the entire car of that train, as well as the train workers, that they made the trip about as unpleasant as could be. We were very happy when we finally arrived at Grand Central.

Night of Disappointment Ends with Delicious Results

We had a meeting today with a videographer for the wedding. The meeting was at 5:30 in the mall. Afterwards, we planned on getting dinner at the food court and making it in time for the 6:40 showing of Public Enemy. Well, things did not work out that way.

First off, the videographer loved to talk. He had a watch on, and I could see the minutes passing. I shuddered as 6:15 hit, and was devastated when it was 6:30 and we were still with him. It wasnt that big of a deal though, because we did like him, and will probably be hiring him. So at least thats one more service out of the way for the wedding.

So after we got done we ran to the food court to see what we could do. We go to discover that all the movie times did not match what Fandango had said on their site. There was no 6:40 showing at all…only a 9:20. It was horrible. Then I said “well maybe we can see Harry Potter” but of course all the shows were sold out. So we stood there deciding what to do.

Not Quite Like Mom’s Home Cooking

When I saw my parents last weekend, I asked my Mom for my favorite recipe of hers: her chicken cacciatore. The way she makes it is amazing…it is so tender, so delicious. The meat pulls right from the bone, and is so moist. However, its a meal that is saved only for special occassions, and is usually only served annually. Thus, I wanted to be able to make it myself, so I can enjoy it whenever.

I made it for dinner tonight with for Shell and Steve. It didnt come out quite as good. It didnt taste the seem, or feel the same, but it did smell the same, so I guess Im getting close. It still tasted delicious. I’ll keep practicing, and eventually I hope to be able to create the dish that would resemble my Mom’s to some degree.

Next up- my Dads pizza!!!

Shell is a Werewolf When it Comes to Shellfish

Shell is your average, mild-mannered girl. Very polite, clean, orderly, and generally “girly.” But when the crab legs come out, there is a transformation of epic proportions. She goes from lovely girl to a crab-eating machine!

Whether its shell, cartilage, or anything else, she will tear through it to get to that sweet, sweet crab meat. She gnaws through crab legs and claws like a werewolf would chomp down on bones to get to the marrow.

Its quite the shocking sight…

Fried Plantains

Shell made some curried chicken, rice, and fried plantains for dinner tonight, and the plantains were simply delectable! She sliced them, then pan-fried them, and then coated them with salt. It was pure heaven. The combination of sweet and salty started a block party in my mouth. My only regret is that I didnt take any pics of them…

Plantains will definitely be a new staple in our dinners from now on.

Salsa Latina Restaurant

Good Mexican food is easy to come by, but the best blows the others right out of the water. The best Mexican food I have ever had was at Salsa Latina, in Albany.

We went back for the second time last night, and it was as good as the first time. The place is small, but the food is excellent. You get complimentary chips and salsa, and their salsa is the very best. It is a nice, spicy salsa, which you dont get too often. I find that most restaurants have a milder salsa, but I like salsa to have a bite, and theirs does.

The menu is very extensive, with the usual “combo meals” of taco, enchilladas, tamales, etc., as well as awesome traditional Mexcian meals of beef, pork, chicken, and others. They also have a large seafood menu as well as some pastas and other stuff. So for our return trip, I was craving my favorite Mexican meal…carnitas.

Carnitas is a slow-cooked pulled pork with a savory sauce, and Salsa Latina makes it the best. The pork is ridiculously tender and flavorful…its nothing short of amazing. It comes with some lettuce, pico de gallo, jalopenos, rice, beans, and tortillas so you can make some little sandwhiches. It is sooo amazingly delicious…I dont think my words can give it justice.

Also, Mondays are 2 for 1 margarita nights. Shell went there thinking they were half price, but they were indeed buy one get one. So as we got into our meal and she was still nursing her ‘rita, the waiter came over with another one, since we are paying for two. So $5 got Shell two margaritas, and they were also the best I ever had. Im not a big ‘rita fan, but these were tasty enough that I know I will be replacing my Tecate with a margartita next time we go. The ‘rita is just perfect for killing down the spiciness that lingers on your tongue from the delicious food.

If you’re in the Captial District and looking for some Mexican food, go the Salsa Latina for the very best.

Mmm…Steak…

I remember being a very picky eater as a kid and teenager. If we went to restaurant, I wouldnt want to go unless burgers were on the menu. I recall going to places like Olive Garden and Red Lobster, and only eating chicken fingers. However, I eventually became a “steak man”, as I am today. Sadly, I still remember the day it happened.

The family and I were vacationing in Niagra Falls, and we went to a very nice restaurant. The special of the day was a prime rib. I wanted no part of it, but no Dad got mad that all I ate was burgers and stuff, so he coerced me into eating it. He regretted it in the end though, as I fell in love. From that point on, for the next few years, I only ordered prime rib!

Today, my favorite cut of meat is ribeye. Its such a tender, delicious slab of tastiness. Its like biting into a bloody cloud of heaven. I like pretty much all steaks, but ribeye is the best.

The reason Im writing all this is because we are watching Iron Chef right now, and the secret ingredient is cowboy ribeye steaks, which are an extra-thick cut of ribeye. It looks so tasty…I wish I could pull the steak out of the TV, like in Willy Wonka…
